Apple Pecan Sticky Buns

Sticky buns, an adventure with an improperly working oven.

So I thought the sticky buns were done because they have been in the oven for 30 minutes and the tops looked pretty brown. But my oven has a mind of its own and never actually gets to the proper temperature. Its been like this for years so I can normally, lower the temp by 25-50 degrees and whatever I'm baking will come out find, but not today.

OMFG moment. The buns completely were not baked at the bottom and were all over the counter because I had tried to flip them. So I had to squish them back into the pan, scraping up everything off the counter. So I told my Mom 'We're not having sticky buns anymore, we're having sticky bun casserole.' After all of that craziness, they taste so good! Sometimes I find cinnamon rolls or sticky buns can be a bit dry, but these are so moist and full of apple flavor.

apple pecan sticky buns

1 1/4 cups (295ml) warm milk
4 cups (500g) flour
2 1/4 tsp dry active yeast
3 tbsp (42g) melted butter
2 tsp vanilla
1/4 tsp salt
1/4 cup (50g) sugar
2 eggs

1 cup (200g) brown sugar
1/2 cup (114g) butter, softened
2 tsp cinnamon
2 apples, peeled and diced
1 cup (109g) pecans, chopped

1/2 cup (114g) butter, melted
1 cup (200g) brown sugar

Mix 2 cups flour, sugar, yeast and salt. Add butter, milk, eggs and vanilla. Beat for 4-5 minutes, until smooth. Switch to dough hook and slowly add in remaining flour. Only add enough until it forms a soft ball that leaves the sides of the bowl. Knead dough for 5 additional minutes. Place in a greased bowl, cover and let rise for 1 hour. Punch down dough, knead a few times and let rest for 10 minutes. Roll out on a floured surface into a 12x18 rectangle

Mix brown sugar, butter and cinnamon. Spread onto dough. Sprinkle with pecans then apples. Roll into a tight log, starting from the short side, pinching the ends to make
sure filling doesn’t come out. Cut into 12 pieces

Grease a 9x13 pan. Mix butter and brown sugar. Pour evenly into bottom of pan. Place the rolls in the pan, cover and let sit for 20 minutes. Oven 350. Bake for 30-35 minutes. Let cool for 5 minutes then invert onto a plate and serve
