Vanilla Almond Bundt Cake with Strawberry Glaze

Another cake! I swear I eat more than cake… sometimes. Cakes are just so much fun to make and make everyone happy. So this is just a little post about a simple cake. This bundt cake is extra luscious, rich with amazing flavor, and soft but not too light. I added a fresh strawberry glaze and blueberries. It could also be just simply dusted with powdered sugar.

Even after making cupcakes at my new job every day, I still come home and just want to bake more. It is so lovely to have a job that I actually love to do and want to go to work. And then having people where I can ask them my baking questions or talk about foodie things is kinda amazing.

Being in the city is also so nice, but I have to resist the urge to walk to places like bi-rite creamery or Humphry Slocombe and get amazing ice cream every single day. So I’ll space out my visits, well I’ll try to….

But I will leave you on a happy note! I’m going to Monterey for the night tomorrow, but still excited! Get to want boys to go spear fishing and wander around taking photos. It should be an exciting two days off.

When u were asked to go, my first thought was, when will I bake???? Two days from baking won’t hurt, I just like how that’s what I think about. Not when are we going, where are we staying, etc. Happy weekend!

Strawberry Glaze

Vanilla Almond Bundt With Strawberry Glaze

Cake

  • 3 cups (375g) flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 1/4 sticks (171g) butter softened
  • 1 3/4 cups (350g) sugar
  • 2 tbsp vanilla bean paste
  • 4 eggs
  • 1/4 tsp almond extract
  • 1 cup (236ml) buttermilk

Glaze

  • 3 strawberries
  • powdered sugar
  • blueberries

Oven 350F. Butter and flour a standard size bundt pan.

Cake

Whisk flour, baking powder, soda, and salt together in a bowl. In a separate bowl, cream butter and sugar. Add in vanilla and almond. Add in eggs one at a time. In alternating batches, gradually add the flour mix and buttermilk. Pour into pan and bake for about 1 hour. Cool completely, then invert from the pan. 

Glaze

In a food processor, pulse strawberries until smooth and add powdered sugar by the spoonful until desired thickness is achieved. Pour over the cake and sprinkle with blueberries.
