Light and Healthy Lunch: Serrano Ham and Peach Salad

Serrano ham and peach salad is a refreshing dish that can be made during the summer. It goes well with a glass of white wine.

Serrano ham, peaches, and white wine are ingredients that make up this light summer salad. The key to this recipe is the vinegar that balances out the sweetness of the peaches.

The serrano ham adds a salty taste to the dish, which also makes it more flavorful. For some extra flavor, you can add some red pepper flakes in your dressing if you want it spicier or if you don’t like spicy foods, you can leave them out.

This is a summer favorite in Spain. The salad makes me think of summer, with ripe, juicy peaches, salty Serrano ham, minty cream cheese and shavings of creamy manchego cheese. Enjoy this tasty side dish on a warm day with friends and family.

Serrano Ham

Hazelnut Vinaigrette

  • 100g hazelnut oil
  • 33g honey
  • 40g apple cider vinegar
  • splash of sherry vinegar
  • salt

Slightly heat all ingredients to approx. 140F. At this stage, blend, season, and cool down over ice. Before using, whisk to re-emulsify the dressing.

For Plating

  • peaches
  • chicory mix
  • Serrano ham, thinly sliced
  • rye bread
  • olive oil

Slice peaches in half and remove the pit. Grill until nicely charred. Cut into wedges. Brush bread with olive oil and then grill until crisp. Toss peaches in the hazelnut vinaigrette, then arrange on a plate. Make curls of the serrano ham and add to the plate. Finish with the chicory mix and bread.
