Graham Cracker S'mores Cookies

Ok so my Grampa was in town (yes I know I am spelling Grampa wrong, growing up he always wanted us to spell it that way) and I want to make him a dessert, something that he would like but wasn't too fancy. And when I asked him what he like, he said "Oh, I don't eat dessert, I dont know..." and then trailed off into another sentence. I just started laughing because the fact that he said he DIDN'T eat dessert was so not true. 

This is the man that:

-the moment he got into town we would go to Lileds (amazing homemade ice cream shop)

-would eat pumpkin pie for breakfast

-would eat more Liled's for breakfast

-at any shopping trip, amusement park, etc would wonder away from the group only to magically appear again with an ice cream cone

So knowing that he probably just didn't have an answer for me on what exactly he wanted. So I had seen this recipe for S'mores cookies a while ago and thought it would be perfect because we all used to go camping together. Which ended after people moving away and the last final time it started to snow in June in Tahoe. And the tent collapsed on us, a certain same Grampa was outside our tent laughing, taking photos.

Anyways back to the recipe. It tastes like if you were making a S'more but instead of using 2 graham crackers to make the sandwich, you replaced one of them with a chocolate chip cookie. So this is a nostalgic recipe that tastes just as good as the S'mores you remember.


Graham Cracker S’mores 

2/3 cup (151g) butter, softened
1 cup (200g) brown sugar
1/2 cup (100g) sugar
2 eggs
1 tsp vanilla 
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
2 1/2 cups (312g) flour
1 package of dark chocolate chips
1 cup mini marshmallows
3 regular sized Hershey bars, broken
2 package graham crackers, broken into squares

Oven 375
Cream butter and sugars
Add egg and vanilla
Set aside
Sift flour, baking soda, salt and cinnamon
Mix with butter mixture
Fold in chips and marshmallows
Lay out graham crackers onto baking sheet
Place balls of dough on top
Bake for 5 minutes then press 
Hershey pieces on top
Bake for 5-7 more minutes
