Chocolate Chèvre Brownies

You will often find that when I'm watching TV it's on the food network. I'm not as into watching someone cook a whole meal...aaah hemmm, 30 minute meals... but more of the challenges and showing different restaurants and bakeries. These Chocolate Chevre Brownies were inspired by the lovely ladies at Vermont Brownie Company, featured on Throw Down, with Bobby Flay.

My new found love of goat cheese was completely satisfied with these brownies. Similar to cream cheese brownies but have that hint of wonderful chevre.

Vermont Brownie Company Ladies, this is only a tribute to you, not to try to copy you. I would have ordered some of your online, but I wanted them NOW because they looked that tasty on the show.

dark chocolate chèvre brownies

2/3 cup (78g) Dutch cocoa powder
1 1/2 cups (300g) sugar
1/2 cup (62g) powdered sugar
3/4 tsp sea salt
1 cup (125g) flour
3 eggs
1/2 cup (118ml) canola oil
2 tbsp water
1 cup (175g) chocolate chunks

Chevre Layer
3/4 cup (168g) chevre, room temperature
1 tbsp powdered sugar
1 egg
1 tbsp flour

Oven 350
Butter and flour a 8x8 pan
Whisk eggs, oil and water together
Mix in cocoa, sugars, salt, flour and chunks
Set aside
Mix all chevre layer ingredients 
Pour half the brownie mix into the pan
Evenly spread all the chevre mix
Top with second half of brownie mix
Bake for 35-40 minutes, until 
center is set
Sprinkle with additional sea salt and let cool
