100 g almonds
100 g flax
100 g white sesame seeds
100 g sunflower seeds
100 g walnuts
100 g pine nuts
100 g green pumpkin seeds
1 cup olive oil
Large pinch of salt
Whisk eggs, olive oil and salt together in a large bowl. Add in all of the nuts and seeds and stir.
Line a long rectangular bread pan with parchment paper and evenly spread the batter in.
Put ‘bread’ in the oven and bake for about 1 hour. Take the bread out of the form and let it cool on a wire rack.
Alfie takes up all of my time now. Except for being at work or the random drinks with friends, it is all Alfie all the time. The little pups is a wild one. Constantly trying to get into everything, play with the cat a little too hard and demanding to sleep right on top of me so I get trapped by the cuteness. A labor of love. So I made this 'bread' almost a week and a half ago. But at this very second Alfie is not attacking me to play with him, so I can now actually accomplish something.
It seems like these nut 'bread' recipes are popping up everywhere online, flooding my pinterest and instagram constantly. A lot of the recipes I found had those gluten free flours that I never use because I actually like gluten. So I knew all of those were out and waited till I saw one that actually appealed to me. When I saw this recipe on Mikkel Karstad's gorgeous blog we you they ate, I decided to finally make it. It is not bread, but I don't really know what else you would call it. It doesn't matter, its really good.
I snack constantly on nuts and seeds, so a big mashup of them that you can use as a cracker, bread, break up over a salad was my dream. For the photos, I spread a bit of soft cheese on it and topped with some veg. I couldn't wait to be done with taking photos of it so I could just eat the damn thing. ;)
