Lemon Scones

I'm still on a lemon kick because I still have so many at my house! And these scones definitely do the trick if you have a craving for lemons as well. They come out soft and flaky with a serious taste of lemon. When glazing them, it uses about half the glaze to cover them all, so let them dry and then glaze again. After they were all gone at my house within two days, my Dad looked at me and said 'Ok, you should go make some more.'

lemon scones with glaze

2 cups (250g) flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup (50g) sugar
1/2 cup (114g) butter, cold and cubed
1/2 cup (120ml) fresh lemon juice
2 tsp lemon zest

juice of 1 lemon
powdered sugar

Oven 350F.
Sift together flour, powder, soda, salt and sugar.
Cut in butter until it forms coarse crumbs. Mix in juice and zest. Form into two disks and cut each into 4.
Bake for 20-25 minutes.
Let cool. Mix juice with enough powdered sugar to make a thick but smooth glaze. Drizzle over cooled scones.
