Jack Cheese Crackers

Today I went up to Lake Tahoe for the day, so my Dad said my goal for yesterday was snacks! I had found this recipe online a while ago but it called for a few different ingredients. I though jack cheese would give them a unique twist and they turned out tasting just like Cheez its! But in a good way, Cheez its that are straight out of the oven, flaky and fresh. I made one batch at first, but after tasting one, I started making two more batches because they are really that good.

1 cup (125g) flour
4 tbsp (56g)  butter, cold and cubed
1 cup (80g) grated jack cheese
3/4 tsp sea salt + more for top
1/2 tsp cayenne pepper
1/3 cup (80ml) cold water

Oven 350F.
Line 2 baking sheets with parchment paper. Mix flour, butter, cheese, salt and cayenne in food processor. Pulse in water until dough comes 
together. Wrap in plastic and chill for 30 minutes.
Roll out dough to 1/8 inch thick between two sheets of parchment, because it’s sticky! Cut into 2 inch squares using a pizza cutter. Poke holes in top of squares with toothpick. Place on baking sheets and bake   for 22-25 minutes.
Should be slightly brown.
