crust (will make enough for two pies)
2 1/4 cups (281g) AP flour
1 tbsp sugar
1 tsp salt
1 cup + 2 tbsp (254g) butter, cold + cubed
1 tbsp apple cider vinegar
3 tbsp ice water
1 egg, beaten
Combine ice water and vinegar in a small bowl and set aside.
Mix flour, sugar and salt into a large bowl. Toss butter in flour mix to evenly coat. Quickly, use your fingers to rub the butter into the flour to create a shaggy dough. Having come flat, thin pieces and large and chunky pieces of butter in it. Drizzle the liquid over the dough. With your hands, toss all together until evenly distributed, will still look a bit dry. Press into a ball, either in the bowl or on the countertop. Just press in any shaggy edges. Divide into two and press into flat disks. Wrap in plastic wrap for at least 1 hour (up to 5 days). You will use one dough disk and you can freeze the other for another use.
Take one disk of dough out of the fridge and let it at room temperature for about 10 minutes to soften just a bit. Roll out one of the disks on a floured surface to 11" inch circle. Transfer to the pie tin, letting it slump in and leaving the extra dough to hang over. Line with parchment paper and fill with pie weights. Bake for 20-30 minutes until lightly browned and bottom looks a bit dried out. Let cool. Keep oven on.
8 oz cream cheese, softened
1 cup (200g) brown sugar
2 eggs + 1 yolk
1 1/4 cups (295ml) heavy cream
1/4 cup (32g) AP flour
3 1/2 tbsp cinnamon
2 tsp vanilla
1 tsp salt
Place cream cheese and brown sugar in the bowl of a stand mixer fitter with the whisk attachment. Beat on high until light and fluffy. Add in the eggs and beat until combined. Add in the flour, cinnamon, vanilla and salt, mixing on low until just combined.
Pour into the crust and bake for 30-35 minutes until the center is puffed up and set. Let cool.
Top with whipped cream if desired.
The tv show Psych ended 3 years ago. To this day, it is still my favorite show of all time. I have seem every episode probably a dozen times or more. They are still hilarious to me every time I watch them. This pie is a reference to the dual spires episode. They go to a cinnamon festival in a tiny strange town, end up solving a murder and eating lots of cinnamon pie.
