Blackberry Pie Bars

Blackberries are on sale right now at Safeway for $1 a package, so had to find a recipe to use for them. These bars came out tasting more like a cake than pie, but they still tasted amazing. Perfect for a lazy sunday breakfast.

Crust:

Zest of 2 lemons

1 1/2 cups (300g) sugar

3 cups (375g) flour

1/4 tsp salt

1 1/2 cups (340g) cold, cubed butter

Filling:

4 eggs

2 cups (400g) sugar

1 cup (230g) sour cream

3/4 cup (93g) flour

Pinch of salt

6 cups (864g) blackberries

Oven 350F.

9x13” pan greased

Crust:

Put the sugar and lemon zest in a bag, mixing and pressing together. Mix lemon/sugar with flour and salt in food processor.

Add butter and pulse until it resembles coarse crumbs. Place 1 ½ cups in the fridge, for topping.

Evenly press the rest of mixture into pan. Bake for 15-20 minutes, golden brown. Let cool completely.

Filling:

Whisk eggs, sugar, cream, flour and salt. Fold in blackberries and spread onto crust. Sprinkle with topping.

Bake for 45-55 minutes, top lightly browned.
