Baked Onion Rings

Onion rings... ahh the deep fried sinful delight that taste so good. The type of food that makes you feel bad but good while eating them. This baked version compares pretty well. A bit drier than fried ones, but with a dose of mustard or ketchup you'll be okay. The recipe calls for Panko bread crumbs, but having never been able to find those at my grocery store, I just used the regular kind.

baked onion rings

2 yellow onions, sliced into thick rings
1/2 cup (62g) flour
Sea salt and pepper, to taste
1 egg
3 tbsp (45ml) milk
1 1/2 cups (126g) Italian seasoned panko crumbs

Oven 450F.
Whisk flour, salt and pepper. Mix eggs and milk in another bowl. Put panko in another bowl. Coat the onions in the flour, egg then crumbs until fully coated. Repeat with all rings. Place on baking sheet. Bake for 10 minutes, flip over and bake for an additional 10 minutes.
Serve immediately.
